I’ve been making a lot of desserts lately. Healthy Desserts. Chocolate healthy desserts. Im a bit chocolate-d out at this point (if that’s even possible) and so I decided to opt for something lighter and brighter and a bit more summery. Especially since the weather was so beautiful this past week, I was craving something berry-ish. Strawberry-ish to be exact! So I decided to try a parfait for breakfast, (as one of the other things I miss being dairy free is greek yoghurt)! My god I love greek yoghurt… so having this gorgeous strawberry parfait that was creamy and sweet and delicious, I must say is a worthy replacement.
Plus its super easy to make. Just make sure you soak a cup of raw cashews in water overnight. Then in the morning all you have to do is ;
Drain the cashews and add to blender
- Throw in 1 cup of fresh strawberries
- Add 1 cup of dates
- Squeeze in 1/2 fresh lime
- TUrn the blender on high until its smooth and creamy!
Pour into a lovely glass bowl and layer with dessicated coconut and bananas and then top with crushed nuts and
Raw strawberry dairy free deliciousness!! Yum!
