Icecream, caramel and chocolate…..a combination of some of the most delicious things on the planet, things we drool at the thought of, things we dream about devouring and when we do usually feel terribly guilty and beat ourselves up about mentally and emotionally. But what if we could have those amazing combinations of tastes and not only enjoy every bite but revel in the fact that it was actually good for our lovely body and only serving to make us more beautiful? Sounds crazy right?
Well thankfully it’s not. Yesterday as I wrote about Gwyneth Paltrow’s new cook book I mentioned how she shared a recipe for banana ‘icecream’ that I’ve seen recently on a few various raw dessert blogs and have been wanting to try. It rquires one ingredient .. Bananas.. frozen bananas.
And needless to say, it turned out as awesome as I had hoped it would.
Basically you chop up 3 -4 nicely ripened bananas (the more ripe, the better)
Freeze them for 12 hours or more.
Throw them in a high power blender (I have a vitamix, which is like the hulk of blenders but any decently high powered blender will do, it just might require a little more work).
Turn in on high and let the bananas blend until they start to turn to a creamy ‘ice cream’ consistency. If you need to turn the blender off and scrape down the sides in between then do so. It will eventually reach the consistency of soft serve ice cream.

Now I did add a little spoon of Madagascar bourbon vanilla just for flavour but it’s totally up to you if you want to do that.
Then I made an amazing raw caramel sauce that I read about on this amazing blog.
All you need is
1 cup of dates
1 cup of water
a little sea salt
a few drops of vanilla essence
Again you blend all of this in your blender until its runny and like caramel.
Then I scooped out the banana Ice cream, topped it with some caramel, drizzled a little high quality dark chocolate (tht I melted on the stove) over the dessert and topped it with crushed walnuts.

Please try to make this yourself at home, you’ll be so happy you did because it’s an amazing way to indulge a sweet tooth but still maintain a healthy body and beautiful figure. It’s bikini friendly Ice cream!!!
