Okay, so we all want to be healthy, we all want to be toned and fit and look good enough to be on the cover of Swimsuit Illustrated, and yes we’re dedicated enough to eat healthy and workout consistently to achieve that goal, because there’s no better feeling in life than feeling amazing in our own bodies! But eating healthy, working out, and staying away from all those lifestyle habits that are detrimental to a beautiful body, is something that is much easier said than done. Because nobody likes the word diet, everyone is miserable at the thought of another salad and life is boring without yummy food quite frankly no matter how good our butt looks in those new jeans!
At least that’s how I feel. And if there’s one thing I refuse to live without in my healthy lifestyle, its chocolate. Making and baking delicious healthy desserts is as exciting to me as buying a new pair of Christian Louboutin’s is to another girl. That excited?! Yes.. that excited. You see I love food. Desserts more than anything, and as much as I want to be super healthy with a super fit, toned body, I just refuse to resign myself to a life without sweet deliciousness. And luckily, I don’t have to!
Every day I’m discovering more and more how easy and quick it is to make desserts from wholesome, natural and even raw ingredients and have them turn out as tasty, if not more so, than all the sugary, refined, health hazardous treats that I ate in the past.
Tonight I made Nutty Chocolate Truffles drizzled with homemade chocolate sauce and I cant even begin to think of words for how good they were. You’re just going to have to try them yourself to believe that healthy can taste this damn good!!
NUTTY CHOCOLATE TRUFFLES WITH HOMEMADE CHOCOLATE SAUCE
1 cup raw cashews
½ cup raw almonds
½ cup dates
¼ cup prunes
½ cup desiccated coconut
½ cup raw cacao nibs (optional, though they give an awesome crunchiness!)
2 Tbsps good quality Cocoa powder
¼ cup water
Place all ingredients in the blender and blend on high until somewhat smooth & doughy. (It’s okay if there’s some chunks of nuts.)
The dough should be sticky as you remove a tbsp a time and roll between your hands to form a ball shape. Then roll the ball in some more desiccated coconut and some raw cacao nibs. Continue until all the dough is used up.
¼ cup raw cocoa butter
1 tbsp cocoa powder
¼ cup coconut palm sugar or dark brown sugar
¼ cup of coconut cream or coconut milk.
Melt the cocoa butter and then add the cocoa powder and sugar to make a smooth paste. Add the coconut cream/milk and whisky until smooth like melted chocolate.
Let cool a little and then drizzle the chocolate over the truffles.
Put the truffles in the refrigerator for as long as you can bear to wait .. (which is not long in this house)
So now you have a recipe for healthy delicious chocolate truffles, hopefully it can make your transition to healthy eating a little easier and yummier 😉
