Gluten- Free Chocolate Cupcakes with Orange Buttercream Icing

When people think about eating healthy and living a healthy lifestyle one does not imagine the making and devouring of chocolate cupcakes smothered in a buttercream would play much of a role. But the fact is they are almost crucial to living a healthy life…

How? You ask!

Well, here’s my reasoning. Someone once told me that we are here on this earth for the simple reason of experiencing three things;  Fun, Love and Happiness. We are here to avail of all the wonders of our world.

And one of the wonders of this world is undoubtedly… Cupcakes!

I think its fair to say it would be hard to find someone who doesn’t find happiness, fun and love contained in a simple cupcake. So why would we eliminate something wonderful like this from a healthy life? Health is achieved not only through good food but through embracing all of life’s wonderful gifts!

NOTE* Now that doesn’t mean I think McDonalds, or Taco Bell or Starbucks Frappuccino’s  smothered in caramel sauce should be enjoyed daily as part of a healthy lifestyle, as these foods are made by large corporations using man-made, lab concocted, chemically altered ingredients and they are not designed in the mind of bringing fun, love or happiness to the customer. They are designed to make these corporations lots of money without little thought for the damage it’s creating to societies health! But it’s not all bad news, because the good thing, the great thing, is that healthy versions of all your favorite comfort foods, that taste just as delicious, (in fact far more delicious) can be made using wholesome natural ingredients that you can eat and enjoy with the peace of mind that you are still being good to your body.

So with that said, I made these ridiculously yummy cupcakes recently, which are definitely a little more on the indulgent side, but perfect for a special occasion like a birthday or holiday or even as a gift! Or… even just for a night when you really feel like baking a batch of cupcakes to share some love with family and friends.

Two of my all time favorite flavor combinations have to be orange and chocolate. So this is my recipe for

Delicious Gluten Free Chocolate Cupcakes with Orange Buttercream Frosting

 

¾ cup coconut flour

¼ cup rice flour

¾ cup melted organic butter (or coconut oil)

6 eggs

2 tbsp Cointreau

1/2 cup cocoa powder

3/4 cup cane or coconut palm sugar

1 cup coconut milk

1/2 teaspoon baking soda

2 teaspoons vanilla extract

 

Preheat the oven to 180 degrees C or 350 deg F

Whisk the eggs, butter, sugar, vanilla extract, coconut milk, cointreau and then add then sieve the coconut and rice flour in with the baking soda.

Keep mixing until it forms a creamy batter. (If it’s too runny, add a little more coconut flour)

Spoon into cupcake cases filling them to about ¾ of the way.

Put into the oven and bake for about 20 mins or until a knife comes out clean when stuck in the centre of the cupcake.

Remove and let completely cool.

 

For the Frosting

1 cup confectioners sugar (or you can use raw can sugar that you can turn into a fine powder in the blender)

½ cup of softened organic butter

Fresh squeezed orange juice

 

Beat the butter and sugar together with a few drops of fresh oj until creamy but stiff enough to frost the cupcakes. Use more powdered sugar if it’s too runny.

Pipe the frosting onto the cupcakes when they are cooled. Grate a little dark chocolate on top for decoration.

Eat and enjoy the taste of fun love and happiness! :)
