I have a lot of lazy days where, when come lunch time, I really don’t want to go to loads of trouble to make myself something both yummy and healthy to eat.
Although I love doing it, I’m really not up for baking loaves of gluten-free bread everyday, or making big batches of soup although I know my sisters, with their constantly rumbling bellies, would like it if I did.
So I am constantly taking note of quick easy recipes that I can throw together while being nutritious and delicious.
Today I opened my kitchen cupboard and a can of tuna and a can of sweetcorn both jumped out at me, so I took them out threw them in a bowl together with some fresh delicious black grapes that my lovely mommy grew, and then took five minutes to make a quick sweet & spicy soy ginger sauce to go with it.
I teamed it with two corn cakes and voila, I had lunch!
The sauce gave it a divine and light asian flavor, and I even succeeded in the hardest task, pleasing my darling sisters!
So here it is Easy and ELAA approved!
SWEET & SPICY SOY GINGER SAUCE
A handful of fresh coriander chopped
1 tsp grated fresh ginger
½ green Jalapeno
1 garlic clove
2 limes freshly squeezed
2 tbsp Liquid Braggs Amino (this is a gluten-free soy sauce available at your local health store! Its delish!)
1 tsp demerara sugar
2 tbsp extra virgin olive oil
pinch of sea salt and black pepper
Throw them all in a bowl and then with a handheld electric blender, whisk the ingredients together until a light pale yellow color. (or if you don’t have a handheld blender, use a regular blender.)
Pour half the sauce into the tuna & sweetcorn and grapes (or use raisins if you have no grapes!) , mix it all together and serve it with some corn cakes, or rice cakes, a green salad, or gluten free bread! You could even bake a potato and use it as the filling! Just a thought!
