Gluten Free Cheesy Salmon Pie.
It’s one of those rare days in Ireland where the sun makes her late summer debut and temperatures reach a perfect high of 28 degrees. It may only happen a handful of times in an Irish year but jeez, when Ireland has a beautiful day, there may be no country to compare.
As elusive as these days are, I always find myself trying to make the most of it by adding to it with some delicious grub. I don’t even mind if it means being inside for a little while whipping something up in the kitchen on these heavenly evenings because, making the most of days like this, for me, is when the whole family can sit down together, after soaking up the rays and enjoy some tasty healthy yumminess.
To me, warm weather is always nicely complimented with some kind of fish dish. It’s always light and healthy and never requires too much preparation. Plus fish is always kind to an ELAA body being a bountiful source of Omega 3’s, those wonderful essential fatty acids that help us maintain a stellar metabolism.
So on this particular evening, I opted to try my hand at baking a light cheesy Salmon pie. Using the basis of a few different recipes, I put together my own version of what I thought would create a perfect pie.
The result was, as we say in our house “Morish” (meaning, every wanted More!)
I paired it with some boiled new potatoes and some light sautéed veggies with a little tamari sauce and voila, a delicious summers evening meal to share with the family.
Paired with a lovely glass of wine, (red for me, white for my sisters) it was a damn delish end to a gorgeous day!
GLUTEN FREE CHEESY SUMMER SALMON PIE
½ cup gluten free flour blend (*see below)
1 tbsp Coconut Flour
1 tsp ground black pepper corns
1 tsp sea salt
1 tsp fresh chopped basil (dried basil is fine if you don’t have fresh)
2 tbsp melted coconut oil
½ can of wild salmon, or ½ cup of fresh cooked salmon
½ cup of good quality cheddar cheese
2 Scallions/green onions
½ small yellow onion
Preheat the oven to 210 degrees Celcius
Mix the dry ingredients well together.
Whisk the eggs and oil together and then add to the dry mix.
Pour into a greased pie tin and top with salmon, onions and cheese.
Bake at 201 deg c for 30 mins or until set. ( a knife comes out clean)
Remove from oven and let cool for a few minutes.
Serve with some boiled or roasted new potatoes and some veggies that you can sautee lightly with a dash of Tamari* for flavor.

*Gluten free flour blend
2 cup brown rice flour or white
2/3 cup tapioca flour
1/3 cup of potato starch or cornstarch or arrowroot powder.
**Tamari is a wonderful dairy and gluten free Soy sauce and can be found at your local health food store.
