The one thing about being home in Ireland on a cool late summers day is the likeliness of walking into the kitchen at lunch time to find Mama’s big steel pot bubbling away, releasing the most tantalizing rich smells of garlic and onions and the days concoction or combination of vegetables, all the aromas complimenting each other and filling our senses until we cant wait any longer and take seats at the table with our spoons in hand awaiting our own steamy bowl of homemade soup.
The beauty with soup is that it is so filling and delicious and when you live in the land of hibernia a.k.a Ireland, or any other unfortunate sun/heat-deprived country, soup warms up your belly and finger and toes and for a while helps you forgive the drizzling rain outside.
The soup of the day today… Mushroom and New Potato Soup. Yum!
2 tbsp Olive Oil
4 New Potatoes
1 Red onion
1 Yellow Onion
2 Cloves Garlic
3 large Portobello Mushrooms
! tbsp tomato paste
2 tbsp Balsamic Vinegar
2 pints boiling Water
pinch of Curry powder
pinch of Rosemary
Heat a large pot with a little Olive Oil.
Chop up the veg into cubes and sweat in the heated pan with garlic and onions.
Once they’re tender, add boiling water so water is about 1 inch over the top of veg.
Add tomato paste and balsamic vinegar.
Add salt and herbs and being to the boil.
Then let simmer for twenty minutes.
Liquidize the soup if you like with a hand held or in the blender.
